Jerk Citrus Bass

 ¼ cup of soy sauce

 1 tbsp. of Worcestershire sauce

 1 tsp. thyme

 1 scallion, chopped up

 ¼ of a scotch bonnet pepper, chopped up with
the seeds

 1 tsp. chopped ginger

 ½ tsp allspice

 1 tsp. black peppercorns, whole

 2 tbsp. orange juice

 ½ tsp. salt

 1 tsp. brown sugar

 2 tbsp. vegetable oil

 6 bass fillets, cleaned, skin on and descaled

Put everything but the bass into a blender. Puree the mixture to allow the
ingredients to mix up well. They should have a fresh and clean smell.

Using a sharp knife, score the skin of the bass diagonally. Do not cut too deep and do
not cut through the fish. Put the fish into a container that has a lid. Apply
the jerk right from the blender. Put the lid on the container and put the bass
into the refrigerator. The bass can marinate anywhere from 2 hours to 12 hours.

Heat a cast iron pan on the stove over medium heat. Allow the pan to get very hot. Take the
bass out of the jerk mixture and pat it so that the bass is dry. Put the bass
skin side down in the pan and cook it for 5 to 6 minutes. Gently, turn the bass
over. Coo it another 5 minutes or until the fish is able to be easily flaked

The following ingredients are needed:

 4 bass fillets, cleaned and with the skin
removed

 Salt

 Ground black pepper

 1 cup flow

 4 tbsp. butter

 1 tbsp. sliced garlic

 ¼ cup fresh parsley

 2 tbsp lemon juice

Use salt and pepper to season the bass. Heat a pan up on the top of a grill. Grease the pan
once it is hot. Dip the bass into the flour and then shake to remove extra
flour. Put the bass into the hot pan and cook 3 minutes per side or until the
bass becomes golden brown. Take the bass out of the pan. In the same pan add
the butter and allow it to melt. Add the sliced garlic. Cook the garlic until
it is a golden, brown color. Add the parsley. Remove the pan from heat. Add the

Fried Bass

 Salt for seasoning

 Ground black pepper for seasoning

 Vegetable oil for deep frying

 2 cups flour

 1 cup of cornmeal

 Milk for dipping

 8 cleaned fillets of bass

Mix the flour and cornmeal in a zip lock bag. Season with salt and black pepper. Put the
bass fillets into a bowl filled with milk. Allow the bass to sit in the milk
for 2 minutes. Allow the milk to drip off. Put the bass into the bag with the

 1 avocado, chopped

 ¼ cup of skim milk

 1 tbsp. lime juice

 1 clove garlic, minced

 1 dash hot sauce

 1 tsp. Dijon mustard

 6 cleaned bass fillets

 1/3 cup bread crumbs
